Launcher | Intermittent Electron build failures

Description

Intermittent unable to parse version string errors on the Jenkins build server.
Find and destroy the cause.

Secondary:
This update should show both the correct launcher version and build hash in the executable's properties. These fields vary by OS, however, so it will require platform testing to verify. :(
